I wouldn't jump the gun
Salvini knows that his position vis a vis the 5SM will be improved in new elections, but doesn't have the power to call them and will back down if Conte refuses. The Russian oil deal investigation also isn't going away.
Like everything in Italian politics, this is going to take time to play out.

Conte offers his resignation, but as it's up to Mattarella to make the next move, there are numerous alternatives to a GE.

And few of them give Salvini what he wanted.
The most likely may be a new coalition led by the PD and M5s, but there are other possible coalitions and a real possibility of another technocratic government that would pass the Budget.
Salvini's recognition that he overplayed his hand was demonstrated by his new willingness to consider prolonging a coalition he declared dead last week, but the M5S seem to have definitively recognised him for the snake that he is.

Would a PD/M5S coalition be any more sustainable? Or is the idea that they'll both (especially M5S) do anything to avoid another general election while the Lega's polling is so strong? Would that extend to agreeing on, say, the TAV, or just a confidence-and-supply type arrangement?

Those are all excellent questions, and the answer is that no one is really sure, but you have correctly identified their shared terror at having to go to the polls.
I think that M5S may finally be willing to give up on their opposite to the TAV given the crushing financial penalties Italy would face, but Mattarella will only give them a mandate if he is convinced that they can pass a budget.
Salvini pulling out a rosary and kissing it while Conte was tearing into him from the podium yesterday was really something else.

This is good, right? Sidelining the League for a little while has to be good? And stopping them getting their election that they were trying to wangle while having decent polling has to be the right thing?
Although there's no chance that this government lasts the full term, presumably?
