This is my favourite of the Boleros so far:

(It's a bit of a cheat as they've clearly edited in a 'real' version, but quite impressive nonetheless....)

They all record it completely separately, probably listening (on headphones) just to the side drum who starts the whole thing off and maintains the same rhythm/tempo throughout. It's about the only big orchestral classical piece where this is true - i.e. there's meant to be no deviation in tempo from beginning to end (in theory). You can actually hear a big shift in tempo when they cut from the new 'socially distanced' version to the old, pre-existing one (so from that point they are only miming, in effect).
Other pieces are of course possible if you're listening to a click-track, but there are very few 'big' pieces where it doesn't sound odd to have no deviation at all in tempo. (But if you go back as far as Bach, say, it would probably be feasible....)

Here's something from my orchestra - the video editing took a while, apparently!

OK, my wife's playing in this one (she's not the very pregnant one, I should add!). You should recognise the tune...
