The Go Between was set in an English summer heatwave, where Julie Christie’s posho got all hot and bothered by a local oik and ends up with her, er, knickers in a twist.
Not sure if Death In Venice counts, though the main character virtually melts in the heat. That film might seem a bit paedo-y these days.

D.O.A seemed to be a very hot movie but that was probably because it was set in Texas. Any film set in the desert - From Dusk til Dawn etc - doesn't count as a "heatwave" movie, does it?

In the Heat of the Night does bear repeated watching and stands the test of time.
The heat does have bearing on the plot although it’s a standard Mississippi summer. Rod Steiger’s cop’s dodgy aircon doesn’t help his temper either.
There’s always plenty of sweltering heat in Tennessee Williams adaptations. Again, fairly standard Southern weather.
