Clubs you don't want to join
I'm with you on not wanting to join but Bite Club does sound like a sensible group. It's not for people who have been bitten by sharks and think that it was really cool.
I can't think of a club that I would like to join. Whatever the nominal purpose of the organization, clubs are really for people who are into stupid club stuff like special ties, wasting energy running for supremely unimportant posts and (most importantly) identifying other people to exclude and look down on.

How does that qualify as a club?
I can see it as a support group, perhaps even a valuable one. But clubs are organisations that bring those with common ongoing interests together. Unless there are people out there for whom being bitten by sharks is an ongoing recreational activity then this isn't a club.

Clubs you don't want to join
Most members of my wife's family - me included - belong to VOD (Victims of Doug). Doug's her father. If you're working on a project with him, you're going to get hurt. He'll spin around with a board on his shoulder and crack you in the head. If you're lugging something heavy, he'll drop his end without warning. Carrying something up/down stairs will inevitably end in [your] pinched fingers.
He has, literally, zero ability to consider there's someone else on the same chore he's on.

I am honoured to be a member of the 1927 club but glad I missed the the 27 club.

Tax evaders are sometimes referred to as not being 'in the club'.
Anyway, I'd be perturbed if I was in the pudding club.
British football clubs aren't really proper clubs, are they? You can't really join them once beyond a certain level.

There's also a negative side.
