Oh...blue cheese. The classis is Port wine obviously but try with a strong xmas ale, one with added spices in it, something like Young's Christmas Pudding, a revelation!

I can't tell you the physiological stuff. Wyatt or Toro are your men on that, particularly Toro as he's been reading This and Brillat-Savarin.
Nah, I know a very small bit about the physiology, but next to nothing about applying it in practice.
And claiming to understand the principles because of reading Brillat-Savarin would be like claiming to be a physicist because you'd read Newton...
