I don't think it's a matter of knowing, really, although there are several such sort-of-oblique definitions that are fairly standard, like "flower" = "river", or "six-footer" indicating some sort of insect. I think it's one of the joys of crossword-solving when you spot one that's new to you and finding there's a previously unconsidered slant to the words.
